Burt's Bees usually does a holiday grab bag - a random mix of about 10 products - for $25. That's what I did for the DC ladies last year. I looked yesterday and they didn't have them listed yet, but usually have them available in the next week or so. Not exactly cutesy but a decent deal.
Costco has a ton of ready-to-go gifts. We got V's teachers these reusable straw cups with Ghiradelli chocolates, tea, other goodies, etc. I'm pairing that with Visa gift cards. You should see what your Costco has!
Unless you actually want to make or put together something yourself... in which case I'm no help!
I bought these plates from myself and I'm going to make brownies in an individual brownie maker. I'm going to melt frosting, pour it over them and then put lines over the top like a gift. Then I'll put cellophane and a bow on it. And that's that. In the end they cost $5-6 and they get a cute plate out of the deal. Teachers and coaches are getting this.

We got her a christmas tree ornament that says #1 daycare and the name of her dc. She just opened this dc up a few months ago and the name is new so I thought it'd be a nice gift for her "first year".
I've also done cookies in a jar. So like a mason jar and layer the ingredients so it looks pretty. Add a bow and the baking instructions on a cute card and voila!
In the past we have done a restaurant gift card, last year I made her a scarf and gave her a coach wristlet, this year I think we are doing a food basket that we got a catalog from that has crackers, chocolate, and an assortment of cheese or something.
We have to do something extra nice since when we tell her we are giving her our two weeks notice.
Do they drink a lot of coffee/hot beverages? I love Tervis Tumblers. On their website they have a ton of different designs, or you can personalize them! I got MH one for Christmas with the travel lid, and it was $20.
I found some cute boxes shaped like gingerbread houses at the Dollar Tree. I am fixing a gift in those that includes Bath and Body Works hand cream, nail polish, cozy socks, a foot soak packet, hot chocolate, and some Lindt truffles.

Ack I didn't even think about getting a gift for her therapist! I'll probably throw together a spa type basket for her: bath salts, lotions, candles, etc.
