I'm going to say Aruba (again!). There a fair amount to do, you can get good hotel/flight deals if you look in advance (I think H and I got a deal for $1k/person for our 5 year anniversary trip), and its on central time (about a 4 hour flight from the states), so not a major adjustment once you're there.
I can give you more info if you're interested, but it is by far my favorite place to get away. Not that I've exactly traveled the world, but we love its convenience.
Knowing that it sucks to get out of Abq (and is expensive), what about California? You could fly into San Fran, do the tourist thing then head to wine country? Southwest makes it easy to get there.
You could also look at that new non-stop Jet Blue route to NY.
I hate trying to fly from here. We just have so few options that don't involve two and three stops and more money. I saw something recently that put us at a relatively high place on a chart of cities to fly in and out of.

Do you think I could eat there easily? I have no idea what the food is like. Unfortunately, that is a major consideration.

I am so enraged that Frontier just dumped us. My friends used to be able to visit from the midwest for like $200, now it is $350+.
Wine country sounds really fun. He is also very interested in the pacific northwest.
Admittedly, I haven't looked at restaurants w/ dietary restrictions in mind, but the food there is ah-mazing. We have a list of our favorites that we like to go to around the island, and you could probably check out menus online before you go/book your trip for most places. Most resorts offer all-inclusive, but we like the local places so much that we go there instead and don't do the AI option.

I think booby is also pretty familiar with the island so she could give good suggestions too. And if not, no worries. We just really love it there, so I'm quick to recommend it to others.
