We have pizza alll the time. The dough takes like 10-15 minutes of hands-on prep, then it takes about 5 minutes to prep a pizza after rising and about 7-8 minutes in the oven. Each batch of dough makes enough for 2 pizzas, so I wrap one up and put it in the freezer for later and it's a super easy dinner. I use the Cook's Illustrated recipe that's on Annie's Eats under "Perfect Pizza Crust". It's a breeze if you have a stand mixer. We top with sauce, mozz, and standard toppings, or sometimes do a spicy oil + goat cheese.

These vegetarian enchiladas are really good. DH ate them and was really excited about them even after he realized there was no meat. I don't like a ton of crockpot meals (too mushy) but it's good for easy meat then I just have to make a veg and side. A whole chicken comes out very tender and delicious - just put it in there with a little water and whatever else you like (I do onion, garlic, s&p, a few herbs if I have them) - cook on low all day.
