Spray a 9x13 pan. Mix together one bag of thawed hash browns (we use the simply potatoes kind), and 1/2 c butter. Bake at 350 for 35 min.
Wisk together 12 eggs and 1/4 c. Milk. Mix together toppings (sautéed onion, sausage, bacon, veggies, etc--we usually just do sausage and onion or broccoli and onion). When the potatoes are done, layer 1/3 toppings, 1/3 c. Cheese, 1/3 egg mixture. Continue doing this until all the toppings are gone. Top with more cheese. Bake at 350 for 35 min or until the center is set.
This recipe can easily be made a day ahead and reheated.
My mom always made this one growing up and now it's our favorite Christmas morning brunch item:
Pines Plantation Inn Breakfast Casserole
1/4 stick butter 1 small onion — chopped 1 small green pepper — chopped 2 -3 medium tomatoes — chopped 12 eggs — beaten 1 24 oz bag frozen hash brown potatoes 1/2 to 1 pound spicy breakfast sausage 3 cups cheddar cheese — shredded
Melt butter and place in bottom of 13 x 9 glass baking pan. Spread potatoes (still frozen is okay) in bottom of pan. Sprinkle chopped veggies over potatoes Add salt and pepper to taste. Sprinkle meat over potatoes and veggies At this point, you may continue or casserole may be refrigerated overnight.
Pour beaten eggs over potatoes. Bake at 350º for 45 minutes. Remove from oven and sprinkle cheese evenly over top. Bake another 5-10 minutes or until cheese is hot and bubbly.
Remove from oven and let set for approximately 5 minutes. Cut into squares and serve with spatula.

question - if you layer the eggs and toppings - don't the toppings just fall through the eggs to the bottom? could you just mix the eggs and toppings together and then pour? I don't understand how raw eggs actually hold "layers"

It's to avoid an all egg crater in the middle--if you mix and dump, all the toppings tend to get pushed to the edge.
