Looking into possibly going to Cabo for vacation for vacation in 2014. Never stayed at an all inclusive before, would be open to it if it's a nice one with lots of dining options.
- Which resort (AI or not) would you recommend? - What time of the year is best to go with the least amount of crowds, if any? We're looking at late May, right before Memorial Day weekend. - Anything we should know about Cabo?
We stated at the Riu there and it was decent. Not my fave all-inclusive but a decent option. Personally though, we had amazing food off-resort so I'd be inclined to stay at a non-AI if I went back.
You should know that most of the water is too rough to swim in - there are a limited # of areas you can swim so if ocean swimming is important! check trip advisor to see what resorts are best.
We loved Cabo - great food, nightlife, people, etc. I'd love to go back!

there was another awesome place by the pier where the cruise ships are but I forget the name...it had wood fired pizza that was excellent.

I came back to add we did ziplining and it was awesome! If you haven't do e it before I'd consider it if you have time. This is the company we used:
Longtime Cabo traveler (had my wedding there), you may want to re-think the AI route in Cabo. It is seriously one of the only towns in Mexico (in my opinion) that has really good food that is reasonable. We have owed a timeshare at the Pueblo Bonito Rose for over 12 years (they have an AI option) and have always found better, cheaper food outside of the resort.
Most of the timeshare properties that you can rent come with kitchens so you can keep some food in your room. (they have a Walmart and Costco in town so you can buy in bulk)
We have a studio unit and we buy enough food to cover our breakfasts, snacks and some beer and maragarita fixins. We typically only eat out for lunch and dinner. We can find lunch for less than $15 pp and dinners for less than $25pp with one super nice meal out per trip. I highly recommend you check out the forums on trip advisor, they are very helpful and up to date on all local information.
I agree that going AI in Cabo is not the way to go, and I'm a big AI fan. There are lots of a fabulous and inexpensive bars and restaurants and it's an easy and safe town to navigate. I also agree with using trapper's list. The TA forums are fabulous and filled with info.
mdgirl we love Los Tres Gallos and Maria Carona for Mexican. I had the best margarita of my life at this little outdoor mall kiosk called Una Mas. All of their drinks are made with fresh fruit and are fabulous. It's a really unassuming little place but the drinks are fabulous (and cheap!).
I think May is a perfect time to go although there may be more kids with school out. We went the first weekend of May last year and it was the perfect time. Weather was great and kids were still in school.
Not sure if you like to fish, but Cabo is known as the MArlin capital of the world so it's a great place to go. Chartering a boat there is cheap and easy. We went with Redrum Charters for their full day trip and it was amazing. We bought some of the fish we caught and took it to a local restaurant where they cooked it for us. Most will make the fish however you want and only charge for the prep, so it comes out being fairly inexpensive.

We went last winter and stayed at Capella Pedregal, and it was absolutely amazing. Capella is not all-inclusive, and I wouldn't want to stay in an AI in Cabo because there's so much great food in town. All of the rooms have an infinity pool on the balcony, so we would hang out in it in the afternoons when they'd bring us some chips, salsa (guacamole if you're not allergic to avocados like I am), and beer before getting ready for dinner. The entire resort was gorgeous, small (less than 100 rooms -- maybe 60ish?), and because it's pretty pricey there were not a lot of kids so I think you could go most any time and not feel too packed in. They had a fabulous infinity pool with a swim up bar that we spent our days at. All of their restaurants are great. They have a quite pricey but incredible seafood restaurant called El Farallon that I would absolutely recommend going to at sunset. It's built into the cliffs and the views are breathtaking. Our package included a free breakfast every morning which was delicious. Things like fresh fruit, yogurt, cheeses, tamales, but also a juice bar and a station where they'd cook whatever you wanted. I can't recommend it highly enough. We're going to Capella Ixtapa next week, but it was a really hard decision to not go back to Capella Pedregal.
As far as places to eat in Cabo, Los Tres Gallos and Gordo Lele were the highlights of our trip. Gordo Lele is a local taco place and soooo yummy! The owner is a huge Beatles fan, so his place is plastered in Beatles stuff, and he'll even sing songs while you're eating. We went to Los Tres Gallos for dinner one night and it was so romantic - we were eating outside in lovely weather under the stars, and twinkle lights, and fruit trees. I don't remember what we ate, but everything was delicious. And if you're a coffee fan, their cafe de olla is awesome.
