I voted for Hawaii but I'm one of the weirdos with no desire to have my kid away from me for several nights in a row. I'm also not keen on the idea of a cruise though but that's entirely my own hang up.
I voted Maui, because we're going as a family in August, and I want to hear your experience before we go! I'm also one of those weirdos who can't go a week without seeing my baby.
I picked Hawaii--I would love to go there someday and really don't have any interest in seeing Alaska. Although I have heard wonderful things about those cruises.

We just got back from Maui with the baby. Do you have any specific questions? I can email you what we did, etc.
Hawaii. I'm not a cruise person, and even if I were I still don't get what there is to see on the Alaska cruises? Adults-only sound nice but that's the only appeal to me.
Maui. You'll be very limited in Alaska with a 1 year old. I think ports and excursions would be boring without the ability to do things like "meet sled dogs and take a short ride", etc.

I vote other... I think think Cruises are a terrible way to see Alaska, unless you're 60. The best parts of alaska are no where you'll see on a cruise and I love cruises. Is there another option for just the two of you? Hawaii sounds great, but if the two of you haven't gone away in awhile I vote for that.
I voted Alaska. We took DD1 to Maui and the BI when she was 11 months and it was kind of a waste in many aspects. She napped 2x per day and wasn't the type to nap in a stroller or carrier, so when we went out and about when she was supposed to be napping, she was just a nightmare. She hated the beach. The next year DH and I went alone and it was amazing.

I love DD to pieces, and I'd miss her if I was away from her, but the idea of a week-long adults-only vacation sounds amazing. On top of that, I find that traveling with DD is so stressful and exhausting that it ends up not being a vacation at all (at least for me). So I vote Alaska cruise now, Hawaii later when the girls are a little older.
