We went to the Ritz in Orlando last year for Spring Break and it was wonderful. It is next to the JW Resort. I didn't check out the rooms at the JW but we had access to the JW pool which was AWESOME. My kids happily played for hours.
We are thinking of going back again this year but not doing any parks, just hanging out at the pool.

what is JW?
JW is one of the Marriott brands. JW Marriott resorts. They are generally pretty nice/upscale more resort like properties.
Sanibel/Captiva Island in FL. Pretty sure a resort like the Sundial would have a kids club. Ritz Carlton in Sarasota is also great. Loved thei beach club.
Also there's a few Hyatts in SoCal that have kids clubs! There's a gorgeous one right on the beach with a red roof that is stunning and has 5 pools, and a kids play splash pad area.
Dreams Puerto Vallarta has a great kids club, they have to be over 3 I believe to attend.
We just got back from Dreams Los Cabos--one concern I had (and Jen can say if it was the same in PV) was that it was REALLY REALLY loud in our rooms. Like, can hear the music blaring until 10;00pm. Clearly. Not a problem for us, since DD slept in a port-a-crib in the bathroom. But if we had small kids sleeping in the room, that might have been problematic.

Granted it was ~6 years ago, but the only night I remember hearing music was there was a wedding that went until about 11pm. But, we were high up on the 14th ish floor, and they did fireworks at the end of the wedding, so I let the music slide but the one in PV wasn't a "party" atmosphere, it was very calm and relaxed.
We stayed in the Westin villas in Maui (not the hotel, the timeshare villas) and it was fabulous and very kid friendly. We liked it better than the fairmont.
