I like little caprese "salads" on skewers - grape/cherry tomatoes, little mozzarella balls, basil, sprinkle with a little balsamic vinaigrette. Super easy and really light.
I just mash a few avacodos and mix w/ a little mayo and some cayene pepper. Easy peasy.

I am always a fan of a good cheese plate. Or, mixing pesto with cream cheese makes for a yummy and easy crudite/cracker dip. Guac is great too - without mayo!

on the caprese easy: rip up a bunch of mozz, half grape tomatoes, toss w. fresh basil, salt pepper, maybe garlic if you have a jar of minced garlic. yummy!
It's insaNely amazing and easy. I've gotten special requests for it at parties. I usually only make half of the recipe, as one puff is usually enough, but it depends on how many peeps there are. I love it with fancy crackers or pita chips.

If you want a cheese that you don't have to cook you can go with a goat cheese log too. I crush up pistachios and get those crasins, roll the log in the mixture (helps if you let it sit out for a bit) and then just put all the extras that don't stick on around the cheese.
Cut a few slices off the end for presentation sake and you're good to go.
