~8 weeks to go before baby arrives and we haven't opened term life insurance policies on either of us. DH says he wants to hit the gym and do healthy diet for 6-7 weeks before taking the life insurance physical (he gained 9 lbs during the holiday season and wants to lose it).

We both had life insurance with work, but we added $750K on each of us when I was in 2nd tri.
The nurse noted that I was expecting, so my weight gain was accounted for. I did not have to fast prior to the bloodwork either. I still was able to qualify for the best rating.
We got policies in my second tri. I would get them now honestly because you aren't going to want to deal with paper work after the baby. I really doubt 9 pounds will make that much of a difference in your rate.

We got ours during early 2nd tri. If he really wants to wait, I would get yours now (they will use your pre-pregnancy weight I think - check on that though) and his in 6-7 weeks. I would want mine prior to delivery JUST IN CASE something were to happen to you during childbirth, as unlikely as that is. There is no way H would have had time to work out with a newborn so I'd just get his done prior to delivery as well.
We both had policies through work, but finalized additional policies when I was about six months pregnant with our first. If, heaven forbid, I would have died during childbirth, I wanted him and the baby better protected. For me anyway, it became more of a pressing concern to have it once the baby passed the point of viability (23-24 weeks?).

Yes. I was about 3 months pregnant.
I wanted to be prepared if something happened to me. It's good I did. I developed hypertension in pregnancy and life insurance would be really expensive now.
We had $500k policies before I got pregnant with my first. I upped my policy to $1 million during my second pregnancy. I was told that I should have it done early in my second trimester or my pregnancy could affect my rate. I would check on that. You may want to wait now.
we finalized ours two weeks ago (right around 31 weeks). I asked our insurance guy if we should wait and he advises couples not to, at least the mom, because so much can go wrong during delivery that can have lasting effects and would hurt your health score. if your healthy now, do it now. unless your husband is on the cusp of being overweight, 9 lbs isn't going to make a huge difference for him either. a few weeks at the gym won't see significant changes in the stuff they test for anyway, except maybe inches on his waist.

Yes, we did, I was something like 38 weeks! We were more in a hurry, because we were both 31 and something about turning 32 significantly upped the cost?
9 lbs isn't likely to make a difference in your husband's rate, and you could probably find out from an agent if it will. Insurance companies have height/weight or BMI charts to determine if you're eligible for the best class.

I still have my work policy. I'm basically healthy but have a fair amount of (non life threatening) issues that would make the underwriting process a nightmare. So, I am sticking with my work policy which I am told is portable.
We've had them for a few years. We each have 1M in term life insurance with no real plans to get more.
I was a little heavier than I would have liked and was worried about the weigh-in, but we both still got into the top health rating so it didn't matter on that front.
