It never occurred to me to do this once a week and serve it in the mornings. Great idea! I'll have to try that. DS1 is a breakfast piggy and I'm always trying to find something that'll fill him up in the morning. I usually only think of it for times I've had to feed a large number of people with easy prep/cleanup.

I do a bag of potatoes o'brien seasoned with salt, pepper, and a little chili powder dumped into the bottom of a 13x9 pan. Wisk a dozen eggs together, dump over potatoes. Then I crumble/chop some cooked bacon and mix in. Top with shredded cheese. Bake covered for 50 ish minutes at 350, uncover bake until eggs are set, another 15-20 minutes.
I make egg muffins every week and change up the fillings. You need silicone muffin liners. I add my filling to the cups, whip eggs with seasonings, and fill to just under the top of the liner. Bake at 400 for 20 minutes. I typically use 10 eggs per dozen muffin liners.
My all time favorite is roasted turkey breast and shredded broccoli, sprinkle Parmesan on top after adding the egg. I put Italian herbs in the egg, along with salt and pepper. So good.
They refrigerate really well and reheat beautifully in the microwave. 30 seconds-1 minute on high.
I never add bananas and have used every fruit combination under the sun. Blueberries and dried cranberries is my favorite. Sometimes I use a mixture of honey and maple syrup, sometimes just one or the other. I haven't been adding nuts, because I worry that my little one will choke, but have in the past with good results.

I think I made mine with ham, though. It was for a Dr. Seuss themed birthday brunch. (Though I did not make the eggs green)

I've made a french toast bake with cinnamon bread, instead of whatever white bread it called for. It was really good. I think it was either Pioneer woman's recipe or a recipe that was similar.
I made it a little different, by not using cream in it, no butter to grease the pan (I used cooking spray) and not as much sugar. I was trying to make it a little more calorie friendly, but it was still really good. The only thing I would say is, if you like your french toast to be a little more "dry" and not like bread pudding, I would use less egg than what it calls for. But, it was really good with warm maple syrup.

My friend taught me one awhile back that's great. I improvise a bit- it's a bunch of sautéed veggies w some garlic (whatever you like) and then a couple whole eggs and then I use a lot of an egg white carton. It makes it a little healthier plus seems to fluff up really well w the egg white.

Make sure you line your sheet pan with tin foil. Don't use a muffin tin. Sometimes the egg spills over a bit and that stuff is a bitch to clean off.
four cups of hash browns three eggs a cup of milk a cup and a half of shredded colby jack cheese a half pound of bulk sausage, browned with half an onion
for the topping: fresh shredded parmesan
Mix all together, put in a buttered 8 by 8 or 9 by 9 pan. sprinkle the parmesan on top (about five or six ounces) Bake at 350 for 50 minutes. Die of happiness

The past two weeks i have made us a breakfast casserole and I am mad I didn't do it this week. I probably could still make something up, but I don't have breakfast sausage. And it isn't a casserole without breakfast sausage.
1.In a large skillet, cook bacon and onion until bacon is crisp; drain. In a bowl, combine the remaining ingredients; stir in bacon mixture. Transfer to a greased 13-in. x 9-in. x 2-in. baking dish.
2.Bake, uncovered, at 350 degrees F for 35-40 minutes or until set and bubbly. Let stand for 10 minutes before cutting.

My mom made one that was croissants, swiss, and ham (and egg of course) and it was sooo good. I don't have a recipe, but if it sounds good you could try googling it.
I like to do mini fritattas in muffin tins. Put in whatever veggies, cheese and meats you choose, pour over eggs and bake. They can be warmed and eaten alone or smushed in an English muffin for quick and easy breakfasts.

This is our absolute favorite. We only make it for holidays because it is RICH, but OMG delicious.
1 pkg Breakfast sausage links 6 English Muffins- cut into cubes 1/4 cup butter- melted 1.5 cups cheddar cheese 1.5 cups mozzarella cheese 1/2 cup chopped onion 1/2 cup chopped red pepper 12 eggs 2 cups milk 1/2 tsp salt 1/s tsp pepper 1 pkg precooked bacon cut into pieces (not cooked yet)
1. Cook sausage and cool slightly. Then cut into slices. (we also have used ground) 2. Place muffin cubes into greased 13x9 dish. Drizzle with butter 3. Layer: Sausage, Cheeses, Onion and Red Pepper 4. Combine: Eggs, Milk, Salt and Pepper. Pour over and sprinkle with bacon pieces 5. Cover and refrigerate overnight. 6. Remove from fridge 30 minutes before baking 7. Cook at 350 until knife comes out clean 8. Let stand 5 minutes. If you can....
