My standby for a long time was either a drive-thru latte and oatmeal, or a WW english muffin with PB and a banana. Portable, fast, easy. But not low carb. My ass is rushing out the door in the morning, and so portable/fast/easy is key.
1/4 cup (measured!) of Bare Naked granola, 1/2 banana, big spoonful of plain greek yogurt.

Dumb question - for those eating 1/2 a banana, what do you do with the other half? Save it for the next day? It would get all brown & gross though. Share with someone? Freeze all the unused halves and make banana bread?

I would eat a whole banana but I'm cheap - I give half to my 2 year old in his oatmeal

Take an unpeeled banana. Cut it in half with a knife. Serrated works well. Peel half and use it, leaving the other half for the next day. On the next day, grab the leftover half banana. Again, with a knife, cut off the end that was cut yesterday. About a quarter inch. That bit will be brown, but the rest of the banana should be fine.
Toast smeared with avocado and topped with an over easy egg Spinach & cheese empanadas Granola with almond milk Hard boiled egg and smoothie Yogurt with fruit (I usually microwave frozen berries until slightly warm and juicy), topped with granola and honey
I think that's all I got.
P.S. Ritzy, If you cut a banana in half without taking off the peel the only part that gets brown is the end where it was cut. You can slice that off the next day and it would still be a perfectly good banana.

My go-to is Greek yogurt with a little something on the side, either a small piece of ww bread with peanut butter or some pop cakes with Laughing Cow cheese.
I don't eat a low-carb diet, but I like low-carb breakfasts. I eat plain Greek yogurt almost every morning (either Fage or Skyr, thanks to CloudBee for the Skyr recommendation) with something added into it. My favorite add-in is chopped almonds that I've toasted in a skillet or in the oven. They add a great nutty, toasty flavor, they're very good for you, and they're low-carb to boot. I toast enough for a week and keep them in a little container. If you take your breakfast to go, you could even divvy them into little snack-size sandwich bags for each day. Then each morning, all you have to do is grab your yogurt and almonds and go.
For a while last year, I was sick of Greek yogurt, so I posted on the old MM looking for other ideas. One of the best suggestions was to make little scrambled egg servings in muffin tins, with add-ins like cheese, veggies, etc. Or you could just make a regular frittata and have a slice each morning. If you have a microwave at work, you can freeze the little egg things or frittata slices and heat them up at work.
The other suggestion I really liked was the "paleo pancake," and by extension, paleo baked goods that substitute almond flour for wheat. You may be able to make waffles that you freeze and toast later, muffins, etc. Check out some paleo breakfast ideas and see if anything might work for you. A lot of what I found was unappealing (steak for breakfast), but there were a few good ideas.
In the summer I usually do a high fiber cereal with Greek yogurt. In the cooler months I do eggs with spinach and other veggies. Too lazy to cook when it's hot!
Today I cracked & scrambled 2 eggs + 1 egg white into a zip lock container sprayed with cooking spray, added some water (like 2 tsp worth), salt & pepper and microwaved for 1.5 minutes at 30 second intervals. I was out of protein powder and needed something quick. This was perfect.
