MIL and FIL gave a pasta machine to me for my birthday. I love it and use it weekly.
They're coming to visit at the end of the month. I would LOVE to make pasta using their gift while they're here, but MIL is gluten-free. Google is bringing up a bunch of recipes, but I was wondering if anyone had a tried and true recipe?

I agree. There's no way to guarantee it's really GF. Is she intolerant, GF for diet reasons (paleo, etc), or Celiac? I think you could do it if she was non Celiac.
As far as the dough goes, try using Pamela's artisan blend flour in a normal pasta recipe, maybe add a bit of xanthan gum. If you're only going to make her one batch, honestly, it would be quite expensive to buy the flour and such. It's a really nice thought though!

Shoot. You guys are right. I didn't even think about that.
She's GF by choice, not due to intolerance, an allergy, or Celiac. I wouldn't want to be like the person using chicken broth for a vegetarian recipe then serving it to a vegetarian so I'll have to ask if she'd be bothered by the possibility of traces of gluten.
I already have a bunch of GF recipes that I've used on previous visits so it's not a huge deal if I can't do the pasta, it's just the sentiment of showing them that I love the gift.
