I took a lot of liberties. I left out the chicken and the tomato. I added about a cup of shredded coastal English cheddar to the pasta and fresh and dried thyme as well. I doubled the amount of pasta, cream cheese and used 16 oz. of spinach. I used two onions chopped and sauteed until tender on the stove top. I still used shredded mozzarella on top and baked it as directed.
I also baked Italian sausage and served that with the cheesy bake.
It was the Chicken with Lime and Mango Salsa, and Green Rice from the Penzey's catalog (recipe reprinted from Homegirl Cafe). The potential seemed really high, and it looked like a dish that could come together quickly with minimal "fancy" ingredients just for that recipe. The only thing I had to buy specifically for it was the cilantro, parsley, and mango (left out the plantain). Everything else I had, or needed to replenish anyways. But it was just eh when it was all said and done.
It's leftover night... BBQ chicken pizza is all we have left in the fridge, so that's what I'll be eating. Pretty happy about it though. It's delicious!
