I'm thinking it'll be a good idea to prep a few weeks worth of freezer meals. With all my sickly crap going on, I figure it'll be a good idea. I can just pop things into the oven when I'm sick.
Lasagna - bake it and freeze it in individual portions Chili Meatballs Meatloaf Veggie soup Cuban black bean soup Grilled and sliced chicken to add to salads, stir fries, whatever
I also take an hour or two every once in awhile and brown a ton of ground beef with onions and dice/cook chicken. I freeze them in ~1 lb portions, flat, in a ziplock bag. The texture isn't quite as good, mostly with the beef, but what is lost in texture is made up in the ease of having sloppy joes, spaghetti, chicken pot pie, soup, etc ready in a few minutes...and no greasy dishes!
Someone said recently (EmilieMadison maybe?) that when they need to make freezer meals, they just up the recipe for whatever they're making for dinner (instead of cooking for 2, cook for 4, etc) and then portion out and freeze the excess. That was brilliant and I can't believe I'd never thought of it before. Rather than dirtying extra dishes etc and cooking just to freeze.
I wish I'd said that, but I didnt because I rarely even cook :? However, when I DO cook, this is actually what I do (especially with soups)! So maybe you just read my mind? LOL!
