I usually have leftovers. I make something Sunday night that will give me one or two days of leftovers, then I try to make something again Tuesday or Wed. night. I also always take an apple or some kind of fruit, and a small salad every day. Sometimes I'll get a rotisserie chicken at Costco and make a bigger salad with that as the protein. Examples of what I make:
Salsa chicken with corn and black beans in crockpot - eat over lettuce Pasta with meat sauce Beef stew Hamburgers, turkey burgers, chicken breast, or salmon burgers (no bun) with sweet potato, pasta or quinoa
I usually try to eat leftovers, but sometimes it just doesn't work out that way. Today I had PB&J on a whole wheat sandwich thin, cheddar cheese cubes, 1/2 cup of strawberries and 1 cup carrot and celery sticks. I've also done BLT with a fried egg on sandwich thin, egg salad, chicken salad made with Greek yogurt (used the Costco rotisserie chicken to make it), soup and whole wheat Ritz with crackers, and if I'm really desperate or in a rut I splurge at the Greek place next door to my office.

I have gestational diabetes, so my options are limited. But I tend to eat: salads, chicken and vegetables, tofu stir fry, 1/2 a sandwich and something on the side, cheese plate (cheese, salami, apple), chicken salad with crackers.
I made a menu for next week. Taco salad Tuna sandwich Sweet potato veggie burger Sweet potato arugula salad Go out to lunch 1 day
Each Sunday I prep veggies for the following week in baggies red peppers, cucumbers and baby carrots. I put a little container of ranch to go with it. I buy the individual size wholly guacamole and put chips in a baggy. I've been buying the single serving of frozen veggies to take with me. Trying to get in more veggies each week. I keep a bag of raw almonds and fruit at my desk for when I'm hungry.
I'm really trying to eat healthy at work. If I don't have food I like I will go but junk. Some days I can't eat anything I've brought & I go buy food. Tacos have been calling my name lately.
With my heart burn, I have stopped eating real meals and instead am snacking every two hours. I will have 1/2 a sandwich at lunch time and the other 1/2 at 2:00 pm. Yesterday was pureed avocado, lime juice and fresh mint on sourdough bread. At 4:00 pm it was string cheese and a mandarin orange Thursday was nutella and strawberries on whole wheat. Then dried mango and pistachios at 4:00 pm
It's usually leftovers from one of our dinners that week but something about leftovers lately is making me feel weird. I used to be totally fine with this method for years but just recently when I think about the food sitting around it just makes me feel icky. I think it's a new pregnancy related aversion of some sort.
Anyway, I was into ham (heated) and cheese (smoked Gouda, mmmmmmm) sandwiches for a bit. This week I made a quiche (bacon and smoked Gouda) and took that everyday. I know that's leftovers but for whatever reason it didn't bother me as much. I also have a stash of soups and those Mac and cheese cups in my office for the days I bring leftovers but just can't make myself eat them. I'm probably not helping much (sorry!) but maybe I'll get some decent ideas from this thread!
I also really like black bean & quinoa quesadillas. I just make a huge batch of quinoa at the beginning of the week so I can use it anytime and usually season my own can of Goya black beans, which I can get about 3 portions out of for myself. I simmer some onions and diced red peppers on the stove top, pour in a can of beans, then add some thyme, cumin and oregano.
