C's bday party is on a Saturday afternoon at 2:00. Theme is Bugs so I'm thinking picnic type food. 20 adults, 8 kids.
Sandwich Trays from Costco Mac Salad (mom) Baked Beans (?) Deviled Eggs Fruit Tray Chips and Salsa What else? This seems sorta sparse, no? Would you change anything?
i ordered 1 dozen normal sized cupcakes (bug decorated) and 2 dozen "gourmet" cupcakes (they are huge). Is that enough? Would you have ice cream with cupcakes?

I would probably add some veggies and dip. If you really wanted more, maybe a cheese/meat appetizer tray? I would skip ice cream, since you have cupcakes but it wouldn't be weird if you wanted it. Sounds good and fun!
I would add a veggie tray and not bother with baked beans--I feel like they're tough to eat standing up, and I like party food to be easy to eat standing up I'd probably also add a pizza cut into small square slices...we did a sandwich tray and pizza from Costco for DD1's party last month and the sandwiches barely got touched, but the pizza was popular.

I would add a veggie platter. We bought one at Costco for M's party. Broccoli, carrots, cauliflower, cherry tomatoes & veggie dip. It was $10, maybe even $8 I can't remember now.
I think you have enough cupcakes. I would skip the ice cream just for simplicity. I wouldn't want to worry about dishing it up for everyone.
We also had cheese & crackers, goldfish crackers and M&M's if you're looking for more snack type foods to add.
I'm going to say no on baked beans. They don't really fit with everything else and they seem messy.
Cupcake count seems fine. The is 1X per adults and plenty for the kids.
I've probable have something with veggies -- maybe veggies, pita quarters and hummus. If you want you could do grilled veggies. Or maybe fresh corn on the cob (which isn't really a veggies). I'd also consider doing cheese and crackers out when people first arrive since that is usually a hit with folks and easy to do.
I never offer ice cream because it is messy. IF you want it I'd consider ice cream sandwiches which are easy to offer and go with the casual tone of your party.
I agree, nix the baked beans and add a green salad/veggie platter. Baked beans are messy and they don't fit with the rest of the food. Otherwise it looks great! I don't think you need ice cream. The amount of cupcakes you're serving sounds fine.

I would say no to baked beans. You can do skippy cups instead of having to scoop ice cream, we did them for DS's 1st bday and they were so easy. Def some snacks for the kids (goldfish, pirates booty, etc?)
