I'm looking for a really good homemade Mac and cheese recipe for dinner tonight. I've never made it before, but it was requested by my dad for his birthday dinner.
I have on hand: -8 oz smoked Gouda -8 oz white cheddar -16 oz medium yellow cheddar -bacon -cream, milk and butter for a béchamel sauce
My H likes the crispy top, so I plan on baking with buttered breadcrumbs.

Probably moot now, but I think you have the cheeses just about right. Mac & cheese is always better with smoked gouda in there. I saute some grated onion in butter (maybe 4T) for just a couple of minutes, then add 4T flour to make a roux, then add the milk and cheeses to make the sauce. I usually season with some mustard powder and smoked sweet paprika. Oh, and I usually add diced ham when I'm mixing in the pasta.
Panko really is the secret, though. Buttered panko mixed with some grated cheddar spread on top.
But, tonight I made something called "Cheese Goo" by some buddies. Usually it disappears quite quickly, but some of my guests this evening were unable to make it out, and I have a bunch left over. I'm thinking of trying to turn it into mac and cheese, but am not sure how to make that happen. The cheese goo is basically butter and cheese (cream cheese and brie) melted together into something that is the consistency of a thick sauce.
Can I just thin this cheese goo down with cream/milk, and mix it with cooked pasta and bake? (with breadcrumbs or such on top?) It's thick enough that at room temperature it can stand a spoon in it...
