Sorry that I have had 900 questions about this trip!
Two questions:
1. We'll be taking a day trip from Seville to Cordoba. How much time should we plan on staying there? (May try to pre-book the round-trip train ticket)
2. We're planning on taking one day trip from Madrid. Would you do Toledo or Segovia? (And with those, again, how much time would you allow to be there?)

How many days are you in Madrid. One of the best parts of Madrid are the great day trips you can take. It is a tough choice but I would pick Segovia. I think that you can get better food there.
Have you considered El Escorial and Avila. I actually like the two better than Segovia and Toledo.

We'll be in Madrid for 3 days, so I only want to take one day trip from there. I'd pick sights over food in making our decision -- we'd only be around for lunch and would want to make our lunch quick. Happy to look into any possibilities!
I absolutely adored Toledo. The Cathedral there was jaw dropping beautiful. I thought the city center of it was also stunning.
Avila was neat but for me it wasn't my favorite day trip. The medieval wall is interesting. Their church has a saint's finger mummified. It just didn't have the oooo factor that Toledo had for me.
El Escorial was very interesting. The castle there is really beautiful.
Half a day should be enough for Cordoba. I've never been to Segovia, but really loved Toledo and wished I had more time than a day there. Personally it's much more enjoyable than El Escorial.
We loved Toledo, but we stayed overnight so we had time to just wonder around and explore. Segovia was honestly kinda boring. I really don't remember what we saw there. We did El Escorial and Valle de los Caidos as a day trip and the timing worked out well. I think Toledo is by far the most interesting because of the history and architecture.
