Double handles (one cold one hot) and single faucet. If your future child accidently turns the single knob to hot, they will feel it (esp if you are holding them to reach the sink to wash their hands and they hit it over). I think there is a little less chance of burning with two separate knobs. But I like single in the kitchen (your child would be well old enough to know the difference between the hot and cold water by the tie they can reach the kitchen sink.
