The only day I have figured out is tonight. I'm making mango margaritas, guacamole, marinated flank steak with homemade salsa verde and churros for dessert.
S: Steak Fajitas (I made mine as loaded nachos... I forgot to by GF wraps and was feeling lazy) M: Grilled Sausage, Rice-a-roni (homemade version), kale chips (homemade) or salad T: Marinated Grilled Chicken W: Pasta Salad ... I can't find the recipe but it's SO delicious - 1 bag of baby spinach - GF (or regular) pasta - Feta cheese (I use Trader Joe's Mediterranean) - Protein (I've used chicken, steak, pepperoni) - Sun dried tomatoes - Dressing of balsamic vinegar and oil Th: Burgers, homemade sweet potato fries, sliced veggies Fr: BBQ Pork Chops, cucumber salad, rice Sat: Chicken of some sort, side still unknown, salad.
We do two-day meals, so I only have to cook every other day: Monday & Tuesday: Pineapple chicken stir fry Wednesday & Thursday: chicken pot pie Friday & Saturday: Beef and broccoli Sunday: not a clue.

Oooh. I like this idea. I'm not sure if I could convince H to eat the same thing two days in a row.

You could also mix it up a bit and cook Monday and Tuesday, then have the leftovers Wednesday and Thursday. It's made life so much easier, especially since I don't really know how to cook for only two people, which is why we started it when we were first married. Now, with the kids, it really makes things easier. Even if it's something that doesn't keep overnight, like french fries, I've always got most of the meal prepped and I just need to heat it up.
Tonight: Tacos Tuesday: Anniversary, out to eat Wednesday: chicken drumsticks and a wedge salad Thursday: out for sushi Friday: chicken parmesean with spaghetti squash
I made entirely homemade mini chicken pot pies yesterday, even the pie crust, left them in the oven to cool a little bit, and then forgot they were there until today. DH was so looking forward to it. I hope he enjoys the bagged fries or whatever else he can find when he's on his own tonight. :/

Tonight: Tacos for DS/DH, taco salad for me! And strawberry margaritas :-) Tues: grilled chicken of some kind, some kind of veggies (haven't gotten far on that one) Wed: grilled BBQ pork loin, salad Thurs: spaghetti Fri: chicken stir fry
I have a huge meat and veggie pastaless lasagna ready to go into the oven and 2 more in the freezer. I'm crazy excited for dinner tonight. The rest of the week is still up in the air.
