This is the "recipe" I use. I really don't measure anymore, so these are estimates.
1/2 cup full fat greek yogurt 1/2 frozen banana 1/4-1/2 cup ish of some other frozen fruit (berries, mango, pineapple have all been hits) handful of baby spinach milk added to get the proper consistency
I blend everything with an hand blender.
DD has been eating these for breakfast almost every weekday since she turned 1. She doesn't have a weight issue, but I started doing them as a way to get protein (greek yogurt) in her because she's picky about protein sources and wasn't adept enough with a spoon at the time to eat yogurt that way. She loves them and I like that I get some veggies in her!

Full-fat dairy, avocado, sweet potato? I have a recipe for an avocado chocolate pudding that does not taste like avocado at all. It's delicious! Mashed sweet potatoes are a staple in our house as a side-dish anyway. Kids love that. Cottage cheese is a favorite too. But we are blessed that they love to eat steamed veggies too. Keep offering a variety of food, you never know what he will like. Sorry you are having such trouble.

This is pretty much the same thing I do, sometimes adding a scoop of peanut butter (though I think you said you're holding off on PB). I get whatever yogurt has the highest fat - right now it's TJ's Vanilla & Cream or Blueberries & Cream (4oz serving = 140 cals & 6g fat)
