Thanks, ladies! The cake turned out so well! I was so happy with it. There were some minor panic attacks when the white chocolate ganache didn't set up, but adding extra white chocolate fixed it, so that was good. And everyone thought that it was very tasty and very pretty!

OMG white chocolate ganache too?!?! I am definitely getting married again and you are making my cake!

Yup, it was chocolate cake with chocolate ganache and raspberry filling between the layers, iced in raspberry frosting, and topped with white chocolate glaze and ganache. The original recipe called for dark chocolate glaze and ganache, but I thought that would be too dark for a wedding cake, so white chocolate it was!
And now that I've got all the kinks worked out, I'd be happy to make your cake!

Was this your first wedding cake? I took some Wilton classes when I first got married and used to make cakes all the time! It was so much fun. I was never good enough to make a wedding cake though, and the clean up was always a PITA. Haven't made one in a long time.

Yup, first wedding cake. I have never taken any of the Wilton classes, which is why the decorations are pretty simple. But, there's an elegance in simplicity, methinks. I played around with fondant before making this cake, but decided not to use it. Wanted to make gumpaste flowers, but I ran out of time and had never tried it before, so it would have taken quite a bit of time to get them right. I did do lots of research on how to reinforce layered cakes so that they wouldn't collapse/slide/etc! BF and his mom helped out a lot with the prep work and cleanup, which made my life a lot easier.

Aww congrats on your first wedding cake! I was never a fan of fondant b/c it tastes so gross (but it's pretty!) I used to play around a lot making flowers and other decorations. So much fun
