What time of year are you going? I've never been, but NEMO is supposed to be fun. There are also some lovely parks--Vondelpark is nice to walk around or Oosterpark. There are some nice playgrounds and fountains behind the Rijksmuseum too.
Thanks for the links. DH is going with 1 kid in a couple of weeks. MIL isn't well but he feels like doing a bit of a side trip and there are cheap tickets to amsterdam

How old is the child? The Anne Frank house is very moving but for a small child I am afraid it will be boring. Try to find a good pannenkoekenrestaurant (pan cake restaurant), they are awesome for kids for lunch. Indonesische rijssttafel is always good as well. I love just walking around het Vondelpark. I love Artis, the zoo, but I do find prices in the Netherlands ridiculous for zoos. But I am used to US prices and they are often less than $10 per person.
One of the things my kids like most is to go on a bike ride. Your DH could rent a bike with a seat on the back for your child and find a nice route that leads out of Amsterdam. Downtown Amsterdam is kind of crazy busy.

He is 6. He loves a good pancake so he may be eating at pancake houses every meal :-)

My daughter is almost 6 too. She and her brother loved all the pancakes on our last visit and we had a ton! You can have plain pancakes with powdered sugar, with apples or a hearty one with cheese and bacon. Some restaurants even have kid pancakes with a surprise toy. I'm sure he'll have a great time!

There are a lot of variety of canal trips that you can pick from, too. Like a pancake cruise (that might be on a bigger boat, not sure) or a pizza cruise. That can add some fun to it. I also agree that Anne Frank may be difficult with too young a child. There are a lot of very steep stairs.
The Rijksmuseum is very kid-friendly with a plan for things to see that are interesting to kids. My 3 year old loved the museum.
The NEMO is the best, though, and that's the one place I'd really recommend. It has a very Dutch feel to it and on the top floor there's a huge space where you can get snack, lay out in the sun (if there's sun) - and also a small water feature kids will play in if the weather's nice. The best thing is the views of the city.
