The Beach House in Poipu was amazing, we ate there for our anniversary last year.
I had the fish special that night, which was some kind of white fish sauteed in macadamia nut butter. Sooo good. Our appetizer was amazing too, it was an ahi sushi roll I think.
Keoki's is my favorite restaurant on the island, but I don't know that I'd recommend it for the type of dinner you're looking for.
Depending on where you're staying, I'd recommend Gaylord's if you're on the east side (their desserts are divine), or if you're on the south side, The Beach House or Roy's. I think the Beach House has a better atmosphere than Roy's (BH is on the edge of the island, great sunset views, while Roy's is in a cute shopping village), but that's just me.
For food, you can really never go wrong with their market catch/fish specialty. A lot of times it'll be the freshest thing on the menu, and they really do get good quality stuff on the island.
roy's is so hawaii that they're everywhurr on the mainland.
seriously, do something unique to kauai if you're splurging! i have nothing against roy's and eat there occasionally, but do something "so kauai" if you can. no suggestions as i've never been, but if there's something like a mama's fish house in quality of food & vibe, do that.
Tidepools at the Hyatt on Poipu. It's on a koi pond, and they can open the windows/walls. If you make reservations, as for a table overlooking the pond.
Roy's is also wonderful, and I see other people have suggested it.
For less casual places: - Puka Dog (you have to go here!) - Living Foods Market (takeout sandwiches/salads) - Keoki's Paradise (drinks/pub food with a flare) - Poipu Tropical Burgers
I wasn't that impressed with Keoki's--the food was alright, but the service was poor. I would consider that your run of the mill restaurant, nothing special.
We loved Tidepools in the Hyatt Kauai when we were there on our honeymoon. It was so freaking gorgeous! Swans floating right up to the edge by our table, tiki torches everywhere. So cool.
The Beach House. I'd recommend making reservations for AFTER sunset. It is crazy town around sunset time and crowded. It starts to thin out after sunset. Arrive before sunset and get a drink at the bar to watch the sunset then have dinner afterwards.
Merriman's Fish House. No view but good.
Josselins. Near Merrimans. We didn't eat here but I've heard good things.
Tidepools at the Hyatt. Really nice and the Hyatt is lovely to walk around.
East Side:
Hukilau Lanai.
North shore: Kauai Grill at the St. Regis. STUNNING views.
