I got a bunch of rhubarb from my CSA box this week. I don't really know what to do with it other than make strawberry rhubarb pie.
So who has an awesome recipe that they want to share? I found a bunch on google but I thought I would check with you all, too. Plus I'm lazy and will probably just use pre made pie crust (the kind that is refrigerated and comes in a roll but you roll out).

It really has a distinct flavor and is delicious. The closest thing I can think of would be a strawberry or cranberry maybe, but that's still a bad description. It's tart, so it's typically used in baked goods along with sugar, and then it's sweet deliciousness. You definitely need to try it.

rhubarb is really tart. Almost all receipts that use it have some way to sweeten it (hence the common rhubarb-strawberry combination, though peaches work fine as a pie option too).
The person who suggested eating it with salt is the ONLY person I've ever known to eat it that way. We used to get a lot in our CSA and they always suggested making it sweet (pies, breads, jam etc)
You can simmer rhubarb in it's own juices with sugar for an hour or so until it becomes really soft and caramelized (you can add strawberries to this too). Then you can use it as a spread on toast or biscuits. It freezes well too and can be thawed out for dessert fillings or again, as a spread.
