Are we posting dip recipes? I bring this dip to every potluck event I got to an there is nothing left when the event is over. NO.THING. It's soooooo good! (I originally posted this on my book club's page and just C&P'd it, hence the book club references.)
Jalapeno Popper dip
3 8oz packages of cream cheese (full fat, but you can use reduced fat if you want), softened 1/2 cup mayo (sometimes I add it, sometimes I leave it out. I added it for the book club batch) 1 can diced green chilies (I use mild for book club, but DH likes medium) 1/2 can diced jalapenos (I use medium. For book club, I only used 1/4 can) 1/4 Parmesan cheese 2 cups shredded cheddar cheese (I actually use the Mexican blend from HEB)
1. Preheat oven to 375.
2. In a large bowl, combine cream cheese and mayo until thoroughly mixed. I like to use a hand mixer so it's as smooth and creamy as possible. Stir in chilies, jalapenos, Parmesan cheese, and 1 cup shredded cheddar cheese.
3. Spread mixture evenly in an 8 x 8 square baking dish (or whatever baking dish you want to use. Doesn't matter.) I would also set it on a foil lined baking sheet. On rare occasions it bubbles over. Sprinkle top with remaining shredded cheese.
4. Bake until mixture is bubbly and cheese is golden brown on top.

5. Serve with corn chips. Enjoy!
I second this dip. I made it for a nestie baby shower and it went over so well that now I'm required to bring it to every gtg.

I totally want to come to this party. Also, smores dip. Melted chocolate chips, marshmallows, broiled, served with graham crackers. There might be more to it but I don't remember. I think about this dip all the time.
Brick of cream cheese 8oz havarti Melt in microwave Add pkg of thawed frozen creamed spinach Add can of artichoke hearts, chopped Sprinkle garlic powder with a heavy hand Reheat and eat
I can't eat potato chips without dip. What's the point?
I have never tried a dip that I've liked, other than hummus. Anything with sour cream, ranch, or cream cheese? Never had a good one. ETA: also, i would always rather dip carrot or zucchini than dip a chip. Chips break!
I've been way too busy at work to give this thread the attention it deserves.
Here are a few favorites: Cheddar Ale dip - super easy and delicious, I usually serve with pretzels. It should be taken out and allowed to soften a bit before serving. Roast tomatoes with fontina - seriously probably one of my favorite recipes in the history of the world Artichoke and olive tapenade - again, super easy and delicious White bean and garlic scape dip - not sure if garlic scapes are still available or if that time has passed
I haven't actually tried this yet but her loaded baked potato salad is amazing so I suspect it is good: Loaded baked potato dip - the chips are the potato component, the dip is just topping ingredients
We have a party to go to on Sunday and now I am not sure if I want to make dip(s) or potato salad. Or corn salad. Or pasta salad.

Alton Brown's Onion Dip. To die for.
Ingredients 2 tablespoons olive oil 1 1/2 cups diced onions 1/4 teaspoon kosher salt 1 1/2 cups sour cream 3/4 cup mayonnaise 1/4 teaspoon garlic powder 1/4 teaspoon ground white pepper 1/2 teaspoon kosher salt Directions In a saute pan over medium heat add oil, heat and add onions and salt. Cook the onions until they are caramelized, about 20 minutes. Remove from heat and set aside to cool. Mix the rest of the ingredients, and then add the cooled onions. Refrigerate and stir again before serving.

chittybangbang, now I know why I'm going to weight a million pounds. That looks so good.
My Cajun Crab dip is a thing of wonder and I always bring home a scraped clean bowl from parties.
1 cup freshly whipped heavy cream 1 container of Krab salad from the seafood section (Albertson's makes my favorite) As much Tony Chachere's Creole seasoning as you like
Fold everything in a bowl and serve with Fritos.
A friend of mine makes an amazing dip that he only brings to Superbowl parties that I dream of all year long. He spreads a layer of cream cheese in a large casserole dish, pours a layer of Cincinnati chili over it, topped with shredded extra sharp shredded cheese, then baked in a 350 degree oven until the cheese is melted and a little bubbly. I've threatened to grab the container and lock myself in my room with it and a bag of chips and eat the whole thing myself.
I always thought this sounded so gross, especially the versions with canned cooked chicken. Then a CW brought it to a potluck and OMG it's the best thing ever. I made it the next 2 weekends in a row.

Never make it with canned chicken. Eeeewwwwwww. Actually, I make this all the time and never eat any of it. I make it out of the love for my H. That's what I tell him anyway.

i made it with canned chicken and that was all I could taste. I like to strip a rotisserie chicken to make this dip.
Other faves: Block of softened cream cheese with raspberry chipotle sauce on top.
Large can crushed pineapple, drained. (Note I don't like waste so I add rum to the drained juice for a bevvie while I prep. Chopped seeded pineapple to taste Chopped cilantro to taste
I love warm spinach artichoke dip in a Hawaiian bread bowl
And baked goat cheese topped with softened sun dried tomatoes that have been prepped in a garlic and basil reduction, poured on top of the goat cheese and baked with it

That baked potato dip is incredible. I use Cracker Barrel sharp cheddar for the cheese and dip with ruffles or pretzel chips. So, so good.

it's still gross to me, but I brought it for a Superbowl party and everyone raved.

Canned chicken? blech. DH cooks chicken breast (boils) and uses that. Also use light ranch dressing- much less oily fat.
