the very simple one: Cook quinoa in chicken broth till just about done, add some craisins, brocolli, salt to taste. Cook till brocolli/quinoa is done. Serve with some crushed almond on top.
DD used to love quinoa and black bean quesadillas when she was in the early finger foods stage. Just mix cooked quinoa, some canned black beans and shredded cheese on a flour tortilla and cook 2-3 minutes on each side in a pan.
