Something with chicken and salad. And I've been really into the corn arepas I bought at the stop & shop as a carby side when I want one so I might toast one of those up.
I'm making this so I can brag about my birthday dinner, which is pretty much all I've done today. Music on in the kitchen, no kid afoot, gin and tonic. oh and I picked the berries and veggies at a local farm this morning, nbd.
Lobster rolls on buttered potato rolls with butter lettuce. Red potato salad with a sweet mustardy dressing. Baked pattypan squash with a panko goat cheese stuffing. Grilled corn on the cob. And a blueberry peach pie with vanilla ice cream.

Oh, can you share the recipe for the pattypans with goat cheese?? That sounds really good!
Pop in the microwave for 5 min. Cut out the stem on top and then use a knife to core the middle (not all the way through. Scoop out the watery seeds and discard. Chop the squash that you cut out and put in a bowl with panko, goat cheese, salt pepper to taste and fresh herbs finely chopped. I used chives basil sage and parsley. Mix the stuffing and then pack back into the hollowed out squashes. Broil on a cookie sheet about 5-7 min until browned on top.
Spaghetti with meat sauce, garlic bread and twice baked potatoes. I'm excited because spaghetti is rare here. My H is not a fan. Oh, and coke floats for dessert.
