I bought these lovely gooseberries on a total whim about a week ago and they're starting to get soft so I need to use them tonight! I tasted one and they're awesome! They're a gorgeous burnished red color, and apparently that makes them "dessert gooseberries" since they are much sweeter than the green variety with that lovely tangy/sour at the end, but don't need to be cooked with piles of sugar.
I'm thinking I want to make some kind of small tart, put maybe a thin layer of almond paste, then chopped gooseberries and a drizzle of honey. However, since I'm trying to diet/watch my calories, I'm on the hunt for something to make a crust with that is healthier/lower cal than my usual pate brisee!
