I would encourage you to break out of what you view as "breakfast food." Every meal needs the same components: protein, fat, and vegetables. You can eat anything for breakfast. It doesn't have to be what is traditionally viewed as breakfast food.
This can also make your food prep ever easier because you don't have to make separate meals for B, L, and D.

My go to these days is sauteed mushrooms, onions and peppers with sausage and avocado. I melt some coconut oil, add the veggies, and then when almost done, add the sausage and top with diced avocado.
I use Sun Dried tomato and basil sausage from Costco.
