first of all, I'm tired. and hungry. and I thought I was being all clever/productive this morning when I put ribs + bbq sauce in the slow-cooker (my go-to easy dinner).
except I forgot I used the rest of the potatoes earlier this week.
then I looked in the freezer thinking I must have some buns (like pulled pork sandwiches or something). nope. those are gone too.
now I don't know what to serve with them and I feel defeated and tired. we have rice, which seems weird. I have pasta in the pantry, but that's also a little odd. ugh! I love potatoes and ALWAYS keep them around.
is there something I can do with what I have that I'm not thinking of? or should I go to the store and get potatoes? as I write this out it sounds even more pathetic, but I can't just eat ribs and peas for dinner.
i keep dehydrated, flaky, potatoes for occasions like this. they're not great, but they do the trick. this doesn't help you, but i would just go to the store and get bread. potatoes take too long to cook.
well, to make matters worse - H is on call. I don't know why I just feel like crying. I'm probably crungry (? lol). screw it. I'm just making some box mac & cheese and eating it with that now. ugh. I can't be angry because it's not a surprise, but it wasn't on my calendar so it's a surprise to me.
When doesn't Mac and cheese sound good! Sorry he is on call . How often is he?
it depends on the rotation, right now it seems like it's a lot for some reason, but he'll have other rotations where he isn't going to be there as much.
