Need a dinner idea for tomorrow night that is healthy and involves chicken. I bought some breasts to make whole wheat chicken parm and now I'm not feeling that idea. I've got the usuals to go with it (garlic, olive oil, spices, etc) and could run to the store if needed. Any ideas?
My favorite is chicken quesadillas. It can be as healthy as you make it. We do chicken, onions, peppers and cheese. You have to watch the shells though. Some are like 300 calories each, but if you go with the spinach or low carb ones they are much less.

Chicken pot pie? It's not bad if you only use one crust on top and skip the bottom one.
