I probably would. I don't think 3 days after the sell by (not expiration) isn't that much and as long as it's cooked thoroughly I would think it's ok. I'm no meat expert though!

I'm weird with meats, so if would be a tough call for me. However, I just had a convo with my butcher like three weeks ago about sell-by dates and he was all "they are NBD and you are still fine to buy for several days after" (and therefore eat a couple days after that). We were talking about the marked down section as it was all at/nearing the sell-by. So I'm sure it's fine.
I would. As long as it hasn't turned colors all the way through or smell bad, we've been known to use it. Usually though we freeze as soon as we get home, so we don't typically follow the sell by date anyways.
