All inclusives are typically not my kind of vacation…but my husband and I went to a wedding at Now Sapphire, and stayed for a long weekend this past May. We had a blast there! The room we stayed in was beautiful, and overlooked the ocean. Any particular questions?
We stayed at Now Amber in Puerto Vallarta last month. I really liked it. The buffet left a little something to be desired (my H would disagree... he loved it), but the restaurants were really good. The pool was always very clean. The wait staff was attentive. And our rooms was nice and clean (and cold!). It was connected to a Secrets next door. We went there to eat dinner one night, and I'm glad we didn't pay the higher room rates to stay there just to be in an adults-only resort. There were very few kids at the Now anyway, probably since school was already in session.
We didn't stay in the preferred section. I'm not really sure I see any benefit to it. You're already getting unlimited food and drink for free, you know?
We didn't use the spa or do any activities really. We basically just sat by the pool or beach, napped, and ate the whole time. It was glorious. We've never done an all-inclusive before (and we probably won't do it again anytime real soon), but it was a nice break from our usual go, go, go vacations.
We stayed at the NOW Larimar resort in Punta Cana last Christmas. We have two small children, so our expectations may be different from yours. We really just want to relax, swim and not have to cook. We were there with other family members and all loved it. We enjoyed the food and the service was great. We did not stay in the Preferred area, which was not a problem for us. However, the NOW larimar resort is split into two areas and we were about a 5-10 min walk from the beach. Our region of the resort had its own pool, bar and restaurant. The one main thing I did not like was that our bath tub was on the balcony, not in the room, which not convenient with two small children.

We did not stay in the preferred section and I'm not really sure what the benefit is. We did walk through the preferred pool accidentally when we were trying to find the spa, and it seemed very quiet compared to the main pool, with not as much fun and excitement going on. But if you are looking for a more relaxing vacation then maybe that is for you!
At the Now Sapphire we basically walked right onto the beach from our room. I must say though that I thought the beach was just okay. It was definitely pretty but I've been to more beautiful beaches in my life. I agree with sicilygirl regarding the buffet and food. The breakfast buffet was pretty awful, but room service and the restaurant food was good.
