I know it's early, but SIL will be here in a couple weeks and we are doing it then.
Right now I'm thinking of a soup (probably mushroom, but totally still TBD), turkey, and roasted root vegetables. I need another side. Nobody eats cranberry sauce, stuffing, etc. We're leaning towards more of a fall food theme, vs traditional thanskgiving.

I vote for both a green vegetable (Brussels sprouts or green beans) and Mac and cheese. I like this Mac and cheese recipe, skipping the baking step and serving it right from the stovetop.
Vegetable Soup (I can give you the recipe if you're interested - it was a big hit) Maple Glazed Chicken Mashed sweet potato (though you could do baked) Roasted vegetables with balsamic reduction Salad with mixed greens, slivered almonds, sliced apples (or pears) and dried cranberries (salt, pepper, cran pear white balsamic and olive oil) Crusty bread
For dessert we had apples with a caramel cream cheese dip and a giant whoopie pie.
