I've got a potluck tomorrow morning with the members of my masters swim program. Last year was great, but it was all carbs. I mean, it was DELICIOUS carbs, but all carbs. So I thought this year I'd do something involving protein. So I found this recipe, which looks easy enough to throw tonight and let it cook overnight.
I think it looks like a good dish to bring. I wouldn't eat it, but only because it has meat and I don't eat meat. The meat eaters that I know would devour it.

Hmmm, the vegetarian thing is a good point, but I don't *think* any of my swimmers are veg. Maaaaaybe one. But I think she'll bring a veg dish if she is, so ...
I'd bring it. For a potluck there has to be at least ONE other thing someone can eat so I never get too wrapped up in the "does everyone have enough to eat" thing.

I don't eat egg all that much (I don't like the texture or the taste), so I wouldn't. But I would also be the one eating the shit out of all the carbs, so it wouldn't matter.

Update: Made it, pretty much exactly as noted. NO ONE failed to eat it (the possible veg didn't end up attending), and our member services manager took a giant bowl for "later". It was a major hit. Seriously delicious. Next time I will try a sausage/meat with more flavor - hot, or sage, or maybe a chorizo? But it didn't NEED more flavor, it's just something I want to try.
It was so easy and it was nice that there was no measuring because just about every ingredient was the ENTIRE package. LOL. The only complaint I had is that there's a possibility my crock pot wasn't big enough, because I had a dang hard time getting everything in without making a mess. But I eventually got it all in there and it cooked down nicely, so transport wasn't a problem. Also, it woke me up at 4am because it smelled so GOOD.
I'm glad it was a hit and am adding it to my holiday list.
2 questions though: 1) what was the texture of the potatoes? (I'm considering leaving them out), and 2) what size is your crockpot?
You need the potatoes. Or something similar, at least - without them it would be about 2" tall. They aren't offensive in texture at all. You could sub sweet potatoes, probably.
I think my crockpot is about 5 quarts, but I'm not 100% sure on that. It looks like a standard crockpot, but next to other people's, it's just slightly smaller than average.

I've made similar casseroles with bread instead of potatoes. It wouldn't be as hearty as the hash browns, but there'd be a little more to it. I don't know how it would work in the crock pot, though.
