We bought a duck to roast this year, because it's just the three of us, and I hate turkey (LOL). I've never cooked duck before, but I'm fairly good with roasting birds. Any good recipes?
I've never roasted a whole duck, only pan-seared duck breast. We're considering doing this for Christmas though. If it turns out well, be sure to post!

Whatever recipe you use, poke a billion tiny holes in the skin with a paring knife, then pour 2 cups of boiling water over it before you stuff/season. Best way to get crispy skin.
