Everything. We gave ours (mine!) to the ILs earlier this fall, and I've really missed it. We wanted to make sure they were actually going to use it before replacing. Then wanted to hold off for a new model and a good deal. Just snagged a mini at Target. Rather than being on sale, it came with a $100 Target GC.
ANYWAY. I use it to surf the net, FaceTime, manage my calendar, and watch videos/edit photos when we travel. It's really handy when we're away from home.
We have TiVo and Optimum Online at home. Both have iPad apps so we can stream.

OK I don't want to thread jack, but I had been considering getting an iPad sometime next year, and I'd like to just ask one question:
Are there keyboards compatible with it/can you use a keyboard with it if you want? H has an iPad but is unsure. I loathe typing on a touch screen and don't know how much I'd use it if that's all I could use to type.

Yes. Google Bluetooth iPad keyboard and you'll come up with all sorts of results. You just need to find the one that is compatible with the specific iPad and stick with the well known brands. Cheaping out will not work out well for you.

Absolutely everything on the Internet. I've had my iPad for 3 years and I actually got rid of my desktop because I didn't use it. I have a wireless air printer so I can print as well. I don't need to type documents otherwise the keypad would be an issue. I use it to listen to music at home and work as well. I'd be totally lost without it.

The only two apps that I use that I prefer on the iPad are The New York Times app and Trulia. But I guess anything with pictures and/or video. Oh, and Angry Birds!
Basically anything that I used my laptop for except things that need to be printed (I'm dying for an airprint printer.) All of my recipes are on it and I use Pinterest for cooking, too. All social media.
It basically never leaves my hands from the time I get home until I fall sleep because I use the Amazon Prime/HBO Go/Netflix apps instead of tv to fall asleep at night. It's an addiction.
When I get my fiancial situation back on track I will upgrade to an Air with 64g, I'm using an Ipad 2 with 16g and it just isn't enough. Do yourself a favor and go for 64.
