I just like to make a nice bechamel, maybe throw in some mushrooms; mix chicken, rice, and a veggie like broccoli or green beans with the sauce; top with cheese; and bake. No real recipe. Justa basic casserole wth homemade sauce instead of cream o' crap soup.

aww, man, I haven't had anything like this in so long. Now I'm starving.
Rice is...not cooked? do you add any extra liquid to make sure it doesn't end up crunchy? Do you ever make this with brown rice?
I've been trying to phase white rice out of our regular weekday meals and MH does nothing but bitch about the brown rice. It doesn't help that he occasionally try and cooks with it and does the weirdest fucking shit with it and somehow always undercooks it. But He only raised his issues with brown rice after I bought a Costco sized bag of it, so now I'm on a mission to make something where he admits it tastes JUST FUCKING FINE.
He's not normally picky and this brown rice bullshit has been on my last nerve.

I grew up with a super semi-homemade version that I totally crave sometimes. No real recipe. Put about a cup of rice in the bottom of a 9x13 pan. Put whole chicken pieces on top. Spoon out a can of cream of mushroom over the rice. Sprinkle Lipton onion soup packet of top. Cover all with about a can of water (more for brown rice). Cover and bake at 350 for about 45 min.

Oh, I cook the rice first. We also usually use brown or wild rice. Sometimes it might be on the less done side, but it's definitely cooked. If I add green beans, I usually do them raw, but I'll often blanch or roast broccoli first because it's denser and I only bake the assembled product for about 20-25 minutes.
ETA: I find that if I've cooked brown rice ahead of time, I really can't tell the difference in a dish like this. I most want white rice when it's with an Asian dish where the aroma of the jasmine or basmati rice really adds to the whole experience. Brown rice is a poor substitute then.

I agree. But you know...fiber and jazz. Besides when I'm just throwing together a Tuesday night stirfry there's only so much "experience" to be had.
When I make my takes all damn day lamb curry it's time for the good basmati.
I've taken to making twice as much rice as I need for any given dish and freezing the other half so MH stops trying to cook it himself and fucking it up over and over again.
THERE ARE DIRECTIONS ON THE BAG YOU ARE A ENGINEER WHO KNOWS HOW TO COOK FOR THE LOVE OF GOD THIS IS NOT HARD.
But it does seem like pre-cooked and frozen brown rice ends up slightly closer to white in texture in dishes where the rice does not stand alone.

I am sympathetic to mr.wawa. I swear that it took me years to cook rice properly. It was a big joke among my roommates in college. I cooked us a delicious full Thanksgiving meal. But ask me to do rice and I was fucked.

Yeah, I'm not fair. He's a good cook. I can't fry an egg to save my life, so everybody has their failing. I ALWAYS either pop the yolk or overcook them or both. And since the entire point of a fried egg is the runny yolk, I'm just in there wasting eggs. But I don't then declare eggs to be a terrible food and give my spouse shit for buying them. So...NO. dAMMIT. HE NEEDS TO GET IT TOGETHER.
And now to atone for attempting to make this thread all about me and my husband and our brown rice issues -
I tell the OP that she should make what people in PA Dutch land insist on calling chicken pot pie, despite the fact that it is in no way at all a pie, but is in many ways delicious and filling and homey and wonderful.

For you rice fans who don't like the process of cooking it, best thing ever: Zojirushi rice cooker. There are bigger ones, but this works for H and me. I make a large batch early on and we use it for different things the rest of the week. I too am trying to switch over to brown rice more, but H is fighting me tooth and nail on it.
