I did this ten years ago, and I thought it went much better back then.
Do you have a recipe that you like? The Joy of Cooking recipe is too sweet, but I think I at least got the consistency right. Can I just use less sugar & more chocolate and hope that it will turn out the same?
Also, I feel like the hardest part of the whole thing is getting a good reading off the thermometer. Any tips?

Easiest (and best) fudge recipe in the world:
Bag of chocolate chips (you can vary what kind/quality here) One can of sweetened condensed milk
Melt over bain marie or double boiler, stir until all chips are melted and it's all one mixture. Pour into greased (butter works best), wax paper-lined 8x8 pan, put in the fridge.
Boom, fudge.
Best recipe ever. My mom has been making this for ages and it always goes super fast because it's so good.
ETA: You can add nuts if you want, but I love it plain (cause that's just how I am, lol). Enjoy, niq!
I can't get the double boiler hot enough. Like, I had the water underneath boiling and I couldn't get it above 210, let alone to 234-236.
I also added instant espresso to one batch for a coffee flavoring, it turned out good!
Meh, I don't bother with a thermometer. Too complicated! LOL

ETA: If you have the bottom of the bowl you're using for your double boiler closer to the water (meaning use a bigger/wider pot), you'll get it hotter.

I'm pretty sure this is how my grandma would always make hers and it was always the requested item every year. She would add nuts to some and leave some plain, it just depended on her mood.
