Loco Coco I actually didn't have any other oil besides EVOO.. but yeah, the coconut worked well. Very faint coconut flavour, and only if you think hard about it
I am going to have to try these! Just used our last bananas making banana chocolate chip pecan pancakes though, other end of the spectrum lol.

They are fantastic motn breastfeeding snacks lol. A and H love them too. I think they are called chunky monkey pancakes on allrecipes.com. I added more banana and used regular sized chocolate chips because the mini ones are a waste lol.

I just made these! They turned out really well, I ate 2 and the kids loved them as well.
I subbed in Coconut oil, and added 2 eggs, chia, LSA, and protein powder.
ETA: oh and my kids named them Hulk Muffins LOL
How was it with the coconut? Does it taste coconutty? lol. I was going to try that! I did brown sugar instead of white and only 2/3 cups, and it turned out great! I was going to maybe try honey instead of sugar next time.
If you use refined coconut oil (you can get it at whole foods/costco etc.) it's a LOT less "coconut-ey" in flavor in baked goods. I use coconut oil a lot but I used grapeseed oil in these.
