I need some veggie inspiration for meals that don't already include veg in them (like chili, pad thai, and soup).
We like to roast asparagus in the oven with S&P and EVOO.
Stupid Easy Paleo's zucchini fritters
went over well last night too.
Thinly sliced apple and/or pear with onion are very good sauteed with coconut oil and S&P.

Broccoli, olive oil, salt, garlic and onion powder. Roast at 375 until a little brown.
Same thing, but with brussels sprouts.
Cauliflower roasted with butter and curry powder.
Cumin carrots

Emeril's roasted cauliflower is amazing. I leave off the Parmesan to make it Whole 30.
Brussels with bacon is also a standby.

Roasting any veggie. I do everything with oil, s&p, sometimes other spices at 425-450 for 15-20 minutes.
I like tofu or veggie stir fry too. It is really good with Brussels sprouts too. Found that out by mistake.

I use Trader Joe's 21 Seasoning Salute on almost all our veggies with a little coconut oil.
