I made this last week and am going to make it again tomorrow. It is so cheesy, carby tasting and there is none of either. So good!
How does it taste cheesy if there's no cheese in it?
I have no idea - I think it is how the spaghetti squash cooks down. It lost all of the "spaghetti" quality and became more compact and creamy. It looks gross but it is good

That sounds really good, though I don't have my hopes up that DD will eat the squash. Pasta is her favorite, and I tried to pass off zoodles the other night with no success. She slurped one up and then made a face and slowly pulled it back out while giving me major stinkeye.
...or maybe it is the fact that I haven't had cheese in 26 days...

I saw that the recipe calls for eggs. I'm sure their main purpose is to bind everything together, but I wonder if they also contribute to a nicer texture. I don't know about taste, though!
