Tennis. I took lessons in college, but haven't since. Also golf. Again, I've taken lessons and played some. My BF says I have a natural talent for it, but I'm not very consistent.

Rowing. They have I think the best bodies in all of the Olympics.
I'd love to get into jumping. I haven't had riding lessons since I was 8, but I totally want to be one of those 40 year old women at the Olympics for the first time ever.
Tennis. H plays and I would love to be able to go out and play a match against him and have it be competitive vs. me hitting the ball into the net each time
Rowing is a good one, too. I have zero exposure to it and the times I have used a machine I have wanted to die. I have seen the college rowing teams along the river here and it looks so cool.
I quit soccer and did rowing instead in college. It's awesome. Insanely hard work, but awesome. Susie Derkins, you can do it even if you're short. I'm 5'3 and was one of the best people on our team. My 4+ lightweight boat won nationals my second year of rowing, and the tallest person in our boat was 5'6". I was the same height as our coxswain. Granted, most people won't even look at you if you're short, but you can prove them wrong if you really want to.
I want to get back into rowing. But, since I already know how to do it, I think perhaps football is my choice for this question. A friend from high school is on a women's professional team out in Utah and it sounds like a lot of fun.

Skiing/snowboarding.
I live in/near the mountains, so it's not like this is unavailable to me, but it's an expensive hobby and I'm terrified of ski lifts (falling off them, specifically) so we haven't tried it yet.

swimming. I know how to "swim" but never really learned the proper techniques for each form. It's definitely on my to-do list once I feel like I have a little spare time in my life.
It sounds strange but Squash. I used to work at a club that had squash courts and the idea that you 'work the ball' and make a non bouncy ball bounce off the walls and racquets intrigues me.
I really miss surfing but since we live nowhere near the ocean, I don't do it anymore. I'd like to try paddle boarding though, since its something I can do here.
Surfing. I love being in the water, and wish I lived by an ocean. If I ever take a vacation to Hawaii or somewhere else that has a high surfing population, I am totally taking lessons.
I rowed in college, too, and it was awesome. Anyone can do it! I wish I could do some fancy diving. If I could just do one dive perfectly, I'd love to bust it out every now and then at our town pool.
I really want to try paddleboarding! Several lakes in MN rent em out and it looks like a blast, just haven't gotten around to doing it yet. I also want to try surfing and am contemplating a 1-day lesson when we go to Puerto Rico this winter
