Also this is timely. We're having a chili cook off at work and ive been struggling to decide if I want to make real chili or the chili everybody expects (I.e. with beans).
You have to do it before you leave for sure. Just make sure you stick with South Philly. My bias is showing but trust it. And NO fucking Pat's or Geno's. Go to Tony Luke's. Even Ishkabibble's or Jim's would work. I have a little South Philly food tour. Water ice on Oregon Avenue after my cheesesteak. Ricci's for hoagies. Cannolis from Termini Brothers.
Pat's and Geno's are not good steaks but I have a soft spot.
My friend's mom had her when she was 16 so when we were 18 and she was 34 she used to drive us in to Egypt's "18 to enter, 21 to drink" nights. She was the best chaperone because she'd go off to the bar then drive us to Pat's after. Pat's reminds me of when I could eat a whiz wit steak at 1 AM and not have it go straight to my ass.
Also do you ever tell stories from your younger days and realize your parents only gave you permission because they didn't fully understand what you were asking to do? That just happened to me.

I am not wrong. I have been to 15 counties on 4 continents and live in a city with the best food scene in the East US. I know food and the Chinese carry outs in DC have amazing cheese steaks. Georgia Ave is a good place to start.

Your experience in other continents is not going to convince me. Thats like saying "oh this is great clam chowder! Ive been to every county in Asia, so I totally know."
But like I said, I will investigate. God know's none of the actual sub shops around here get it right.
Texas is so cute....thinking they have a monopoly on chili.
To me its not chili without beans or tomatoes.
I am pro beans and tomatoes in chili, but I also respect the rights of the creators. Just like every native Philadelphian knows that no city will ever make a better cheesesteak and no one does étouffée like NOLA, I respect the right of native Texans to proclaim their chili to be the right way. I mean, they're the OG of chili! Besides, real foodies know how to stay in their lanes lol.
