I want to add that I lived in New England until I was 13 and then moved to Philly. I have a lot of feelings about food. Specifically chowder, cheesesteaks, and apples.

Nobody outside of the metro Philly area gets cheesesteaks right. I was at a restaurant in Iowa that put a slab of sirloin on a club roll with melted American and called it a steak sandwich. I nearly vomited (no, I did NOT order it, there was a pic on the menu).

Btw I fully agree Texas gets to claim their version of chili. Just like certain areas get to claim certain types of bbq. They can even claim theirs is the best like many bbq regions do. But they do not get to declare that all the other chills are wrong because they came up with one way.
I only like one type of stuffing ( cornbread ) but I think the other gross tyoes can still call themselves stuffing .

I am pro beans and tomatoes in chili, but I also respect the rights of the creators. Just like every native Philadelphian knows that no city will ever make a better cheesesteak and no one does étouffée like NOLA, I respect the right of native Texans to proclaim their chili to be the right way. I mean, they're the OG of chili! Besides, real foodies know how to stay in their lanes lol.
Texas claims they started it but they started the bean free version. Meat and chili and beans were eaten for centuries in Spain and Mexico. Hence why I find it so funny. It's like Christians claiming they have the definition of marriage when they took over a centuries old concept, changed it a bit, and then claim their way is the original way. End rant.

It's not like folks in Wisconsin (and that's a Midwest state I can pick on) know a fucking thing about Spanish food when they throw some ground beef, tomatoes, and kidney beans (seriously, the worst of all beans) into a pot with some chili powder and call it chili.

I totally agree that certain states or regions have a way of doing things. Don't make a Maryland crab cake mostly breading. Its not a Maryland crab cake, then. Its still a crab cake (and I actually prefer them the non Maryland way) but don't call it a Maryland one!

Not ground beef - cubed beef (chuck roast or whatever). Base can be as simple as water, but more likely is beer or beef stock. With all the chiles in there, you don't miss the tomatoes.
First, I like chili with beans and tomato. Second, I had a cheesesteak in Philly (an actual Philly native took me and she lives in West Philly but we drove to South Philly for this cheesesteak) and it was just OK. Lastly, I want wings with mumbo sauce now. And Eddie George's at Ga and Lamont across from what used to be Brown's Caribbean Bakery, is the place I used to go to on Ga. Ave.
A guy in Charlotte won the Food Truck Wars and has a couple of trucks, and had mumbo sauce. I knew he was from the DC area when I saw mumbo sauce as an option. I asked him, and sure enough he was.
Well since none of you responded to my request for a no bean chili recipe, I just went to the store and bought the ingredients for my usual chili which has meat, beans, tomatoes, AND sweet potatoes in it.
As a side note, I had to go to ALDI as we are having a snow storm here and that is the only store in walking distance. It stresses me out. There are so many rules there: bring your own bags, bag your own groceries, cash or debit only. I couldn't figure out how to get a cart. They were all locked up and I had to put a quarter in to get one unlocked. So confusing!
Dh and I went to Philadelphia a couple years ago and we made a point of asking people we met, "Hey, where's the best cheese steak?" Everyone had a very definite opinion and they were so passionate about it. It was hilarious how adamant they were.....we ended up going Campos and it was delicious but what do I know, I'm a Californian. And, also, no beans in chili, for heavens sake.

I've made one of these recipes...I just can't remember which (it was awhile ago). I want to say it was the more difficult recipe but I just subbed whatever chiles I could find (I live in a predominantly Hispanic neighborhood so a lot of these chiles aren't that hard for me to find - but I don't think I've ever come across costeños chiles).

I love Tony Luke's. She must get it "whiz with". That's the authentic way. The whiz and the grease melt together and it's amazing.

In my world chili always has a tomato base and contains beans. In all my years of living and travels I've never encountered it any other way, and legit had no idea that there was any other way to make it.

Me either. WIthout beans it's just a bowl of meat (don't want!) but I guess that's what the name means per what tacos said earlier.
