DS has demonstrated that he's capable of recognizing when he needs to pee and poop, in that he often tells me when he's doing one or the other. When we have naked time before or after bath, he'll use the potty. He's 32 months now. My problem is if I ask him if he needs or wants to use the potty and it's not around bath time or he's not trying to delay bedtime, he'll tell me no. So is disinterest reason enough to delay potty training or is this something that we should pursue a little more aggressively like with a pants free weekend?

No. Not enough to not do it. We pted over Xmas. Ds never told us he had to go and when we asked he said no. We did the 3 day method. He was good on day 2.
Three day method just has you run them to the potty when they start to go for a couple days and they make the connection. I tried asking my other kids and it turned into an epic battle of wills (I won, but it wasn't fun).
I PT two of mine before they turned 2 and one right after. If I waited until they said yes let's go potty if still be waiting.
