My fave thing. Cook chopped broccoli, some sliced onion and salt and p in olive oil until the broc greens up a bit and the onion gets a little caramelized. Add some very thinly sliced sweet potato. Cook a bit and add about an inch of chicken broth to the pan. Add a drained can of brown lentils and cover. Bring to boil, reduce heat, simmer til tender and uncover, simmering until it all becomes a nice goulash consistency. Serve salted and peppered.
I'm intrigued and might give this a try tonight. I have some chopped broccoli in the fridge from last week that needs to be used.

My fav is roasting chopped broccoli (but you still want them kind of tree-ish) with olive oil, garlic, salt, and pepper -- until the broccoli is dark. Then at the end add a little lemon juice and parmasean (even the pasta stuff works but actual cheese is better obv). It goes off so well and it's so easy!
I did a really yummy asparagus the other night.. roast at 400 for about 12min. Then combine melted butter, 1Tbsp balsamic vinegar, and 1 tsp soy sauce and drizzle over the roasted asparagus. YUM.

You guys are so fancy! I am too lazy half the time to open a can of green beans for my kids, much less make detailed sides. If I make something with fresh veggies, it's always roasted.

This won't go with snapper, but it's good and I always get requests for the recipe. Pineapple bread casserole cream together 2T butter and 1/3 c. sugar. Beat in 3 eggs Stir in 20 can of crushed pineapple (with juice) and five slices of cubed bread. Cook at 350F for 25-30 minutes.
The recipe is slightly altered from what my mom used to do, but I like it better. She had more eggs, sugar, and butter.
