I like to try making new things but I haven't done it in a while....so recommend a recipe for me to try! Any meal, just has to be (at least somewhat) healthy.
I got the southwest eggroll recipe from this board and it is a fave of ours now.
I found this knock-off recipe of split pea and barley soup at California Pizza Kitchen. This is my version:
Ingredients:
2 cups split peas 6 cups water 2 cups vegetable broth 1/3 cup minced onion 1 clove garlic, minced 2 teaspoons lemon juice 1 teaspoon salt 1/4 teaspoon dried parsley 1 dash dried thyme 1/2 cup barley 6 cups water 2 medium carrots, diced 1 stalk celery, diced chopped green onion, for garnish
Directions:
Rinse and drain the split peas, then add them to a large pot with 6 cups of water, vegetable broth, onion, garlic, lemon juice, salt, parsley, and thyme.
Bring to a boil, then reduce heat and simmer for 55-75 minutes or until the peas are soft.
While the peas are cooking, combine the barley with 6 cups of water in a saucepan. Bring to a boil, then reduce heat and simmer for 55-75 minutes or until the barley is soft and most of the water has been absorbed.
Drain the barley mixture in a sieve or colander and add it to the split pea mixture. Add the carrots and celery and continue to simmer the soup for 15 to 30 minutes or until the carrots are tender. Stir occasionally.
Turn off the heat, cover the soup, and let it sit for 10 to 15 minutes before serving. Garnish each serving with a little chopped green onion. -----
The original recipe includes a teaspoon of sugar, but I don't do that. Also, you could puree the soup in a blender if you wanted, but I prefer it more chunky. I think it's really hearty and delicious!

Italian Salmon Cakes with Bacon
Ingredients
4 slices bacon 1 (7.5-oz) can wild-caught Alaskan salmon 1 large egg, lightly beaten 1 Tbsp almond flour 2 tsp Italian seasoning 1 tsp lemon juice 1 tsp grated lemon rind 1/2 tsp garlic salt 1/2 tsp pepper 1 Tbsp coconut oil, melted

Preheat oven to 350°F. Place bacon on a paper towel-lined plate. Microwave on HIGH 2 minutes or until crisp; chop. In mixing bowl, combine salmon, bacon, egg, flour, seasoning, lemon juice, lemon rind, garlic salt and pepper. Form mixture into 4 patties. Place patties on a rack rubbed with coconut oil set on a rimmed baking sheet. Bake 15 minutes or until golden brown.
*Edit: For the record, when they say bacon...they're referring to Turkey Bacon.
this is was a new one but a hit with my H. I adjusted the seasoning due to our tastes. Like less chili power and I added beans, which I know is not paleo. I think that is what the blog is going for.

Ok wow...mine is going to be super lame but super easy:
Healthy Pasta carbonara 8 oz pasta 1 tbs olive oil 1 clove garlic 2-4 slices of bacon, cut up 1 egg, 1 egg white 1/2 tsp ground white pepper
Make 8 oz pasta (I never know how to measure this so I just make pasta) Heat 1 tbs olive oil in a pan over medium to medium high heat with 1 clove of garlic pealed and smashed Cook 2-4 slices of bacon in olive oil until crisp, set aside and remove clove of garlic(you can use turkey bacon but I usually use regular bacon) Crack and mix egg and egg white with ground white pepper. Once pasta is done cooking drain and return to pot. Pour egg over pasta and stir, the heat from the pasta will cook the egg. Mix in cooked bacon and serve. Top with Parmesan cheese.
If I want more protein I add chicken which could be used instead of bacon to make the dish a little healthier. This is a go to easy meal for me.

And I currently have this recipe in the slowcooker, but never made it before so can't yet say if it's good. I'll try to remember to update and let you know!
I will have to try this! It looks delicious and H loves avocadoes.
It is seriously the best thing ever. We make it multiple times a week in the summer (no need to turn on the oven!), and it's very forgiving. We leave out some spices, add in random things, use regular onions... still delicious!
