I had to have a single shot in the roof of my mouth once. Probably 20 years ago at least, and I still remember how fucking much that motherfucking needle fucking hurt, and omg the fucking blood that spurted from that motherfucking needle hole. No fucking way I'd surgically remove part of it. I'd rather have a dead person in my mouth for the rest of my life. No fucking shit.
I had it done about four years ago and they used an artificial graft, not donor or my own tissue. I'm not sure how it is made but it's worked really well and my new dentist said you can't tell I had it. They took some of my blood and ran it through a machine, then soaked the graft in that to make it adhere easier.
I'd go for the cadaver. I have a cadaver graft in my knee for my ACL and granted it's not the same as your mouth, the tissue is sterilized and within weeks, it will become part of your own mouth. I don't see this as being weird. They use cadaver parts for plenty of things. It's not like you'll be licking a dead person.

My best friend had this done on one side of her mouth about six weeks ago. She is going in to have the other side done soon.
I don't think she was given the cadaver option. They used material from another animal, I can't remember what. A cow maybe? For the next procedure they are using skin from her mouth.
Some of it didn't take and so the dentist is going to have to redo parts of it. It is a lengthy and rather difficult recovery process. I don't know if it didn't completely work because they didn't use her own skin but if you can use your own I'd do that.
ETA: Maybe I am imagining the tissue from another animal? Reading another response, perhaps it was artificial tissue. Her gums were so bad that her own tissue wouldn't provide enough. He thinks he can get enough for one side though. She could not brush or floss or even swish liquid or eat anything that wasn't liquid or pureed for several weeks. Also, her whole face swelled up and was bruised so she looked very bad. But she had an extremely severe case.
